Its a fruity bread kind of day. Strawberries and blueberries in this bread. Look at that pretty color!

Fruits keep the bread soft and moist. There is no added sweetness except the usual sugar/maple to activate the yeast. The bread is has a mild fruit flavor and can be used in either savory sandwich or sweet french toast preparation like this Coconut Crusted French Toast.

On another note. I am enjoying all the Indian food cooked up by Mom, and she and Dad are enjoying the treats(Barfi, Kulfi, desserts) I keep making for them, so Mom can pick up the dairysubstitutes:). The everyday meals they eat at home are almost all plant-based. Back home in India, they do add a tablespoon of milk in their morning and evening tea, and probably sometimes serve paneer(cottage cheese) in parties. This week, it took mom 1 try to figure out how they like the almond milk and now its like almond milk in their tea everyday. Once she tastes Cauliflower Makhani, I am sure she is going to serve that, instead of Paneer. More so now since they agreed to watch a portion of this Indian Dairy Industry horrors video.(theyweren’tfully convinced with verbal discussion).Most people in India still think that the cows are taken care of and they produce excess milk after the calf has had its full and so on.

Mom then remembered that about 30 years back, the doodhwala(milkman) would bring theBuffaloalong to freshly milk it in front of the people, so the consumers knew that there was no water added to the milk. He would take an injection out and go thwack on the side of theBuffalo and then proceed to milk her.That was probably oxytocin, a banned hormone injection, which gives the Buffalo a lot of stomach cramps like Labor pain along with the inducing excess production of milk. Its unregulated use has also been linked toearly puberty in girls in India.This was30 yearsago and it has only gotten much worse for the cows.

Steps:
Proof the yeast in warm water. Add flours.

Add strawberry blueberry puree, salt, oil.

Knead into a soft dough. Spray water on top and let rise until doubled.

Punch down, knead and shape into a loaf. Spray water on top, Sprinkle oats or sesame seeds or flour. Cover with a towel and let rise for 35-40 minutes until double.

Bake in pre-heated oven for 40 minutes. Cool completely before slicing

Strawberry Blueberry Bread Loaf
Allergy Information: Free of Dairy, egg, corn, soy, nut
Makes 1 8.5 by 4.5 bread pan

Ingredients:
½ cup warm water
2 Tablespoons raw sugar or maple
1 Tablespoon active yeast

1 cup bread flour
1.25 cups wheat flour (or 1 cup wheat and ¼ cup sorghum/millet flour)
2-3 Tablespoons wheat flour for dusting
2 Tablespoons oil

4 strawberries
¼ cup blueberries
2 Tablespoons water
½ teaspoon salt
About ⅔ cup puree

Method:
In a bowl, add ½ cup of warm water, sugar and yeast, Mix and let sit until frothy. 10 minutes
Add the flours and oil to the yeast mixture.
Pure the strawberries and blueberries with 2 Tablespoons of water and salt until smooth.
Add the puree to the bowl.
Mix well and knead for 5-6 minutes. Add more flour if needed.
Spray water on top and cover with a towel. Let the dough sit for 1.5 hours or until doubled.
Use 2-3 Tablespoons wheat flour to knead for another minute.
Shape into log by pulling on all sides, or by rolling up like a jelly roll.
Place with seam side down in parchment lined or well greased bread pan.
Spray water on top.
Sprinkle oats or sesame seeds.
Cover with a towel and let rise for 40 minutes.
Bake in pre-heated 370 degrees F oven for 40 minutes.
Cool completely before slicing. Store in the refrigerator in airtight container or ziplock.

    I love the idea of fruity bread- I bet this smells amazing while it’s baking!

    That is so crazy about bringing the buffalo along to milk in public and injecting it with a hormone while they were at it. Crazy!

    that is crazy about the buffalo being milked in public to prove that it wasn’t tampered with YET was being injected with a hormone. How ironic.

    i love this fruit bread! i bet it would taste AMAZING if thick slices were used for peanut butter and jelly!

    Am I happy I’m not as haunted by those videos of animal abuse since having gone vegan. Yes, I think there still is a general impression that cows are taken care of in India or that animals are generally treated with compassion in India because of the culture’s roots in vegetarianism (me speaking as a Singaporean Chinese. Singapore has a multi-ethnic population). Btw love the sound of that cauliflower mahkani! Pinned that and hope to try that soon. Cheers 🙂

    oh my goodness, that sounds and looks amazing. I love the idea of making french toast with it! YUM. The picture of your mom making Dosas made me want to invite her to come stay with me! ha 🙂 It’s not like cows anywhere have a particularly great time, but I’m not surprised things are so rough for the dairy cows of India, they never look too happy when I’ve seen them there. 🙁 poor little souls.
